I started to make these when I was doing baby led weaning with Olivia and she literally asks for them every single morning. I wanted to make pancakes that weren’t full of additives or sugar, but also something she would enjoy eating. They’re easy to break apart so if you are doing baby led weaning you won’t have to worry too much. The best thing about it is they are only 4 ingredients!
If you want to make any adjustments you definitely can. For the oats, we love the mix at Trader Joe’s that has oats, chia, amaranth, quinoa and flax. Full of fiber for their growing belly! And sometimes instead of cinnamon we will use a pumpkin pie spice blend. You can also add in any fruit too. We’ve done these with strawberries and blueberries.
You can easily meal prep these for quick access as well. Typically Olivia (20 months) will eat 3-4 pancakes at breakfast. This recipe will make you about 8-10 pancakes depending on the size of the banana and how large you make the pancakes. We like to make extra for the next day or we will make a large batch to keep in the fridge during the week. You can keep in the fridge for 3-4 days or the freezer for up to 6 months.
